Ayam Masak Merah

Ayam Masak Merah is another traditional menu that is inherited from parents and grandparents. Why?

Because each family, household and states have their own way and ingredients for this meal. Although I would say, they are all almost similar, but some families have different taste buds, so they always change the amount of chilli or coconut milk or others that will slightly change the taste of this dishes.

Ayam masak merah is served at a wedding as one of the special dishes, during festivities like Eid or other celebration, sometimes with Nasi Tomato or a normal daily meals along with rice, vegetable, fried eggs and fried fish.

Cook this Ayam Masak Merah along with me 😍 and serve with rice and omelette.

Ayam Masak Merah (4 serving)

Prepare Ingredients

1. Cooking Oil (we use palm oil here)

2. 4 Red Onion – Slice Thin

3. 5 Garlic – Slice Thin

4. 2 x thumb size ginger

5. 2 tomato – Each cut into 4

6. Grind Chilli

7. Tomato Sauce

8. 1 can tomato soup

9. Half Cup Tamarind Water

10. 4 friends – 2 each (cardamon, cinnamon stick, cloves, star anise)

11. 2 lemongrasses, cut, clean – slice thin

12. 100 gms cashew nuts

13. 1 chicken – cut into 16

14. A pinch of salt 😀

15. 1 x thumb size Turmeric

*A secret to a delicious Ayam Masak Merah is to marinate the chicken with salt and turmeric and fry the chicken first for about 10 minutes before starts cooking 🔥. Half cook. And then take it out again, toss it. Use to same oil to continue cooking.

Blend to make paste:

1. 2 Red onion

2. 5 Garlic

3. Ginger

4. Chili paste/ Grind Chilli

5. Turmeric

Now straight into the wok and keep cooking 😉 medium heat fire 🔥

1. Heat up 3 table spoon cooking oil – 1 minute

2. Pour in the blend paste – 2 minutes

3. Add 4 friends – 5 minutes

4. Add lemon grass – 5 minutes

5. Put in 1 can of tomato paste – 5 minutes

6. Add on 4 table spoon tomato sauce

7. Add on 1 cup of water

8. Add on tomatoes (cut into 4 each)

9. Put in the fried chicken – 10 minutes

10. Add on tamarind water

11. Add on cashew nuts

12. Half teaspoon salt

13. Add on 2 sliced thin red onions – 10 minutes

Serve Ayam Masak Merah with rice. 💃
